In summer, we are looking for things that are fresh and light. A salad can be seen as a great option at any meal. However, we must be careful that our salad is complete in nutrients to properly nourish our body and fulfil our appetite in order avoid the cravings we may feel throughout the day.

To make a salad that is a single and complete main dish, we need to choose the ingredients carefully so that they include the three essential nutrients (proteins, carbohydrates and good fats), but also fibre and, finally, a maximum of vitamins and minerals.

Today, I would like to share with you a delicious, super healthy and complete recipe based on three of my favourite ingredients: quinoa, red beans and avocado.

Quinoa is one of the most popular healthy foods in the world and its benefits are innumerable.
The small quinoa pearl is rich in proteins, fibres and nutrients such as magnesium, vitamin B, iron, calcium, phosphorus, vitamin E and various antioxidants.

The red bean is a legume  rich in proteins, as well as fibres which facilitate the intestinal transit and allow us to have a fast and long lasting satiety effect.

And avocado, for its part, is rich in good fats, fiber, omega 3, vitamin E or potassium.
This vegetable fruit is  essential in our diet, to guarantee a healthy skin, heart and brain.

Here is the recipe (For two people) :

1 cup cooked quinoa
1 cup cooked red beans (To facilitate digestion, do not hesitate to soak them before cooking for a minimum of 12 hours)
1 avocado
1 cup green leaves (young salad, spinach or kale)
1 red tomato, sliced
1 carrot raped
1 tablespoon goji berries
Fresh coriander

For the dressing:
Cold pressed extra virgin olive oil
Unpasteurized apple cider vinegar
Juice of one lemon
Himalayan pink salt
Black pepper
A pinch of cayenne pepper

To prepare this delicious salad, nothing could be easier than to mix all the ingredients and serve!

Thanks to its high protein and antioxidant content, this salad is a perfect option for rebuilding our muscles and replenishing energy after our yoga session.
